Use like a cordial and serve hot or cold with hot water or cold still or sparkling water.

Ingredients

6 stalks of fresh or frozen lemongrass (availalbe in asian supermarkets usually in the freezer)
Fistful of ginger
1 large lemon
2 spoons of honey or to taste
1 litre of water

Remove any rough outer parts of the lemongrass and chop whole stalk into rough pieces.

Peel and roughly chop the ginger.

Juice a big lemon without any pips.

Blend the lemongrass, ginger and lemon juice in a blender until it is finely chopped (don´t worry too much as we will be sieving it all later).

In a heavy saucepan place the ingredients in along with the water and honey (to taste) and stir until the frothy mixture is absorbed into the liquidand it is steaming.

Remove from the heat and allow to cool.

Once cooled, strain the liquid so all the remnants of ginger and lemongrass are left behind.

Store in a clean bottle in the fridge for up to a month.

To serve -experiment with your own taste, but use like a cordial with hot water or still or sparkling cold water. Add lemon to decorate and serve in a mug or special glass!
